There are a lot of foods we don't quite understand why people are intimated to make -- we've already covered why lobster, jam and pie crust are all worth tackling in your kitchen. But risotto might be one of the most feared foods to cook at home, mostly due to the attention this Italian classic requires to turn out right.
But once you get the basic steps down, you'll open yourself up to a world of risotto possibilities. While classics like four cheese will always hold a special place in our hearts (and stomachs), there are some delicious twists worth venturing out of your comfort zone to make.
