This version of chile con queso includes beer for a flavor boost. The recipe is made with a white sauce base to ensure the dip stays creamy -- it also cuts down on calories since you don't use as much cheese. Make it up to 3 days ahead of your party and reheat on the stove-top or microwave.

Here's a fresh idea for game day; Get a keg of beer and tap it. Wait a couple of hours and then feed the drunk bastar#s anything. They'll be singing your praises for weeks.

Oh! As long as it "ups" the flavor. Would that be anything like "enhances?"

Here's one of my favorite beer recipes. Please note this is a right-handed recipe, reverse for lefties.
Take beer from the refrigerator, open and set on counter. Take a mug from freezer, and hold in left hand. Tip the top of the mug at about a 25 degree angle to the right. Pick up beer from counter in right hand and pour into mug at a slow to medium speed. As beer reaches the top of the mug, slowly tip the top of the mug back to the left. When all the beer is in the mug, kick back in your favorite chair, and enjoy. This is a great recipe to teach your kids. That way you don't have to get out of your chair.

I really resent the stereotypecast that ALL Mexican food is made with liquor or beer... While we many dishes that are made with beer (Frijoles borachos for example..) there are some that are NOT.... While I cannot think of one right off the top of my head, there has to be at least one out there.... If I think of one I will let you know.....Don't hold your breath....

I made the chili con queso dip and it is really delicious. I used what I had on hand so I didn't have the cilantro for the garnish but had everything else. I used the mild Rotel with chilies. It only took about 20 minutes to throw together and boy, is it tasty (I did have to dirty up a few dishes to wash but it was worth it). I would only make a couple of suggestions for anyone interested in making it. Since I had mild Rotel you probably can add a bit more cayenne maybe a 1/4 tsp. I don't like hot things but mild Rotel doesn't have the spice to stand up to the cheese and beer so next time I will use the original with chilies. Also, perhaps a little less chili powder, I could taste it fairly strong. I used the dark ale I had and that was wonderful. It was so good it even made my stale corn chips taste great!

I love a good meatloaf, but mine lack something, dry with not much flavor. Mine tastes like a giant hamburger shaped like a loaf.

Go to your local sandwich shop at the end of the day and ask them for their bread ends.
Put the bread ends into a big bowl and add enough chicken stock to soften it.
Season it with a dash of black pepper, some diced green bell pepper, diced onion, dash of parmesan cheese. Add about 1/3rd to meat of this to your ground beef with two raw eggs, and combine very gently. Bake until cooked through at 300 o F. Remove the loaf carefully, but save all of the juices in the pan. To those juices add a cup of chicken stock, dash of black pepper, and a tablespoon of self rising flour. Stir. Simmer this gently on the stove top until it thickens. This is your gravy. Return the loaf to this and slice off nice serving pieces. Serve with mashed potatoes and some of the gravy....Alfred-

Hi Alfred,

You have been Chopped.

We feel your technique and use of the pantry items was lacking in creativity, and can not proceed to you the dessert round.
