Wow these recipes look amazing - thank you for this post! Been veg for several decades and
am so glad it is gaining respect. People don't realize how truly delicious, inventive and brilliant the cuisine is. Since going vegan, cooking has become truly an art and a spiritual thing for me. Thanks again.

I was hoping that these were going to be recipes for cooking vegans. I have several in my freezer, and don't know what to do with them.

Thanks for the link. I have chickpeas in my freezer, I cook up a batch and then freeze, bought some avacodos and lime today so I'm all set to try this later in the week. I always have corn and brown rice wraps in my freezer.

Sounds like you are all set! Enjoy and let me know how you like it.

I'd try any one of these recipes, and in most of them, a little hamburger would really make them good.

Soy is not necessary to be vegan. I know vegans who don't eat soy at all. One of the misconceptions is that you need soy for protein. In fact, protein is found in vegetables, legumes, nuts, and seeds, and without the fat and cholesterol of meat.

Yes, if you can't tolerate soy you can be a vegan. I'm delighted that so many of these recipes do you soy which is a bit unusual but I love tofu and fortunately don't have any problems.

I'm going to try the crepes this week because I couldn't find a recipe that didn't require an egg or wheat flour. Now I have to search for garbanzo bean flour though.

In many of the recipes, you can just leave the soy out without any problem. If I were to leave it ou of the crepe recipe, I'd probably use garbanzo beans or cannelini white beans for protein.

Chili lime tofu sounds wonderful. Where is the recipe? I just made a quinoa, kale dish that used pine nuts and it is delicious.

I've become more and more vegetarian/vegan for several months now. The price of meat has skyrocketed, and there are sooooooo many great protein choices. I read food labels for a living and the world of food processors is a dark and scary one. I want my food to only contain food; not a science experiment. When the label on a package of "chicken nuggets" (and I use the term "chicken" very loosely) is longer than half an 8 1/2 x 11 inch sheet of paper, I wouldn't touch it with a 10-foot pole...

May I ask what kind of job you have that you read food labels? I'd love to do something like that.

I work in the nutrition/healthcare dept at a foodservice distribution company. I gather a ton of information for schools, daycares, and skilled nursing centers; and consult with customers on federal and state nutrition and food safety regulation

Would someone be willing to share some recipes for tempeh with us? I like it, at least in theory. But I'm having trouble finding ways to use it and make it a versatile ingredient.

Thanks.

I love tofu but can't stand tempeh but if you google "tempeh recipes" you'll come up with loads of them.

I haven't eaten meat in a while. I'm not a vegan as yet but if I can find a stable of good recipes I shall make the move.

I find the tastiest veggie and vegan food in Indian IMHO.
