Peter Gilmore is the chef of Quay, one of Sydney's -- and the world's -- best restaurants. Fittingly, Gilmore is inspired by Australia's Great Barrier Reef. In the dish he demonstrates below, Gilmore uses ingredients like mushrooms, tapioca and octopus to create an edible coral reef. It's a great idea -- actual coral reefs are eroding at a scary pace, but an edible replica doesn't destroy the environment, it just proves why reefs are so important in the first place (i.e. they are stunning!).
