Weeknight Dinners: Recipes Using Rosemary

We've all bought a packet of fresh herbs at some point for a specific recipe and after using the one or two sprigs needed, we're still left with a whole bunch of herbs. Well, unless you dry the leftover herbs right away, most of the time it will end up spoiling in the back of your fridge. It's easy to forget about those herbs and then you feel bad because you let them go to waste. Well, not anymore! With this handy recipe guide you can cook a week's worth of meals, from Monday to Friday, using a bouquet of rosemary.

Rosemary is so versatile -- it can be chopped for use in a marinade, glaze or sauce. Whole sprigs can be roasted with chicken and potatoes (the herbs turn crisp and they're delicious when eaten). Hardier rosemary sprigs can even be stripped of their leaves and used as skewers for cubes of meat or fish. Here are five great ways to use rosemary for your weeknight dinners. This is probably the easiest and most flavorful dinner you will ever make. Simply combine olive oil, lemon slices, garlic cloves and lots of rosemary with chicken pieces on a baking sheet and roast. In less than 40 minutes you'll have dinner on the table. Feel free to add cubed potatoes to the pan so you have a side dish.

I have made this rosemary chicken meal a few times now and it is awesome.

Corn and rosemary go together beautifully. A sprig in kernels while they're cooking them (along with some butter and pepper) and lots in the water when you're steaming corn-on-the-cob.
