Alinea's Reservation System To Be Replaced With Next-Style E-Tickets, Grant Achatz Says

It's already hard to get a reservation at Alinea, Grant Achatz's universally acclaimed, three-Michelin-starred restaurant in Chicago. But soon it's going to be impossible because Alinea is doing away with reservations altogether.

Instead, the restaurant will soon start selling prepaid e-tickets for all of its seats, as Achatz's experimental restaurant Next already does, the chef told The Huffington Post.

The price of an e-ticket has not yet been determined, but it will cover the cost of the meal. It's not clear when the restaurant will launch the new system; since reservations are accepted two months in advance, it won't be before June, Achatz said.

E-ticketing helps restaurateurs by eliminating the risk of no-shows, he said. These tickets are nonrefundable, similar to theater and movie tickets, so if someone cancels at the last minute, the restaurant still makes money.

"What people don't realize is that profit margins at restaurants are extremely small -- between 5 and 15 percent, overall," Achatz said.

"Let's say you have a reservation for a four-top," he explained, holding up four fingers, "And at the last minute, one person gets sick." He dropped one finger. "There goes your entire profit for that table. But with tickets, you solve that problem right away."

One potential snafu is that diners could be upset to pay for food they don't eat.

This has come up before at Next, which has relied on e-ticketing since its opening. Some people, finding themselves in that situation, have sold their dinner tickets on sites like Craigslist for several times their face value. Demand on the secondary market has run so high that observers have wondered why Achatz doesn't auction off tickets in the first place.

"But that's just price gouging," Achatz said. "And that's not what we're here for."

Many who find themselves unable to use their tickets post pleas for help on the Next Facebook page and often can find other ticket holders who are willing to trade, Achatz said.

Referring to his intuitive understanding of the possibilities of the Web, Details named Achatz one of the year's Social Mavericks, whom the magazine called the biggest movers and shakers in social media.

Alinea and Next are not alone, though, in replacing reservations with tickets. Two-Michelin-starred San Francisco restaurant Saison has been sell $498 e-tickets for the tasting menu at its small Chef's Counter since November, just announced that it will sell all its seats using the same SeatMe e-ticket service starting April 10th. And another attraction near the Bay Area, the Restaurant at Meadowood, is mulling ways for customers to prepay for meals following its late March reopening after a renovation, reported Bloomberg's Ryan Sutton.

Achatz anticipates more restaurants joining them in the future.

"Every business is trying to find ways to use social media and the Internet to help build their business; this is a perfect example of that," he said.

When you're the 6th best restaurant in the world (according to Restaurant magazine) you can pretty do whatever you want.

But yeah, first-sale tickets to Next are impossible. The scalping and secondary markets for their tickets, should give the Zetas cartel pause.

You would think that a chef who is rocking the restaurant scene would look more in control or sharper than this. Whether he is losing his hair or got schocked by electricity he looks like a mad scientist.

After a meal at this type of restaurant I find some White Castle Sliders make me feel much better and not such a idiot for buying in to this pretentious nonsense.
By he way If three of four people show up you are still making profits on the three.
I also would rather eat from a cleaner looking chef.

Food like this isn't catered for people like you. Personally, I enjoyed my experience at Alinea. Was it expensive? Yes. I could afford it. Was it something you do every month? No. It's for special occasions. Just because you're a white castle person doesn't make Alinea any less of a quality experience. Personally, I wouldn't feed White Castle to my pets.

What utter nonsense.

It is not all that, the reason people want to go there is to say, I had a $1000 meal for two.

The food is just mediocre, it is a show and quite frankly I found it not worth it.

BTW, Alinea is a ripoff of the ORIGINAL "El Bulli" in Spain that served different "forms" of food--so Mr Achatz should not pat himself on the back too much.

Nope, that is not what I am saying.

Achatz is money hungry, imagine buying a $1000 meal, and then being hospitalized and missing it.  Most people don't know how to sell their tickets when they are in the hospital, or have a serious situation.
The switch they are making only makes it MORE not worth it to go.

I've never been, nor would i ever go, if a restaurant is hard to get in to, it's rarely worth the money to me, as at that point you are paying for status, not food, I'd rather eat ethnic, something legit and not marinated in chef's ego and "vision."

This is bs, when you live out of town and want to plan a trip to Chicago to eat at Next or Alinea, now you have to stalk the damn facebook pages and follow their endless status tweets just to try and get a table. I too am glad to have had the pleasure of dining at Alinea; I wanted to go again but probably won't if they do this. We ate at Next for their Thai menu but since they instituted an even more stupid method for the El Bulli menu, there is no way for me to wait and wait and wait and then snag a same-night ticket, only then I won't have a plane ticket. Or should I fly to Chicago, then spend an entire day waiting for the release of a table for that night, only to get aced out by the 1000 other contenders? I think not. I'll just try for a 3rd time at Schwa or some other excellent place; Grant, I'm a true fan and admirer but your business model has become ludicrous.

Hear, Hear! It’s time we treat food with the respect it deserves. As Grant often says, food is art, equal to Bach and Rembrandt.

We could just line up, pay admission, and then walk past the food, behind velvet cords, taking a bite or two when appropriate. It would solve the problem of having three selfish people at a table for four. And for the standing ovation at the end, we’d already be standing.

It would be so much less trouble for the artists. The waiters could act as docents, shushing anyone who tries to talk, keeping the line moving, and reminding everyone what this is all for.

For Alinea, a restaurant that serves some of the best food in the world and makes its customers feel special, this is harsh. Next reservations work for the restaurant but are a complete fiasco for the customers. They've worked out kinks in their system so their website doesn't crash as much, etc., but to have to wait around your computer for tables to be released like a teenager trying to get tickets to a concert is not customer friendly. It's in direct opposition to the spirit of Alinea. Oh well, they'll be full and there are plenty of other restaurants in town for me to visit - still, I'm rather sad.

It is really a shame that Alinea has come to this. I have been fortunate to eat at Alinea 8 or so times but it will now be impossible to get in. Like NEXT, it will be populated with 25-year olds who are up at 2AM on Twitter when tickets are made available. If Chef Achatz is concerned about losing people at a table, charge the credit card when the reservation is made. I am happy to pay in advance. But I will not lose sleep to get a reservation. That is ludicrous.

15% profit margin is only on the food they sell. The food in the walk-in that spoils and the occasional nibble by the servers cut further into those profits. Also- 15% is the high end of profit margins, when restauranteurs speak of these margins they are usually referring to alcohol sales and not food. And while a retail space might make 15% profit on sales they do it with minimal employees, while restaurants have several times that. Oh and then there's the costs related to insurance, sanitation, high employee turnover- I could go on.
