Green Superfoods

First, the bad news: Soda bread, corned beef and beer do not a highly nutritious meal make.

But as luck (of the Irish!) would have it, there are, in fact, plenty of superfoods available in mid-March. And they're green!

In honor of Saint Patrick's Day, here are a handful of our favorite emerald-hued, nutrient-packed superfoods -- good to enjoy whether you're celebrating the holiday or not. Any picks you can't believe we overlooked? Let us know!

Why we love it:
This springtime favorite is, according to WebMD, "one of the most nutritionally well-balanced vegetables -- high in folic acid and a good source of potassium, fiber, thiamin and vitamins A, B6 and C."

How to enjoy:
Try steaming asparagus and sprinkling a little bit of lemon on top for a refreshing side dish or snack. You can also use it to make a fresh, creamy (and eye-catching!) soup.
