First, the bad news: Soda bread, corned beef and beer do not a highly nutritious meal make.

But as luck (of the Irish!) would have it, there are, in fact, plenty of superfoods available in mid-March. And they're green!

In honor of Saint Patrick's Day, here are a handful of our favorite emerald-hued, nutrient-packed superfoods -- good to enjoy whether you're celebrating the holiday or not. Any picks you can't believe we overlooked? Let us know!

Why we love it:
This springtime favorite is, according to WebMD, "one of the most nutritionally well-balanced vegetables -- high in folic acid and a good source of potassium, fiber, thiamin and vitamins A, B6 and C."

How to enjoy:
Try steaming asparagus and sprinkling a little bit of lemon on top for a refreshing side dish or snack. You can also use it to make a fresh, creamy (and eye-catching!) soup.

When you add up all the lists of superfoods, you end up with a list of green veggies and fruit. So, eat lots of green veggies and fruit.

But if it's a list you want, check out what one billionaire spent millions for research to produce. There's about 33 foods on that list. Add one per week and soon you'll live forever, which is what this guy wants to do.

Lately I have been obsessed with spinach, I take it and toss in xtra virgin olive oil and mince garlic and heat it just enough to wilt............YUMMMMMMMMMMM!

I can't believe Kale didn't make this list. It is the best! And there are so many ways to enjoy it. I particularly like kale chips since I am a bit of a potato chip addict and kale chips are so much healthier (you can see my whole list of alternatives to potato chips below.) I have become a total kale convert.

I have to agree with Cathleen on this one. Although Kale can be a little difficult to stomach if not prepared well, it is definitely near the top as a very nutritious vegetable.

I loved cooked spinach.I follow a recipe by Sunny Anderson on the FN.Her cooked spinach has garlic,onion and cheese,wow.Look for her Creamed Spinach recipe.

I've recently started eating a more healthy diet and most of these green items are included so I'm glad I made the right choices. I just wish they wouldn't make me so gassy!

Yummy, yummy, yummy! As long as it is not brussel sprouts (never could develop a fondness for those), I will gladly attack any green veggie--some cooked, some raw, some chopped, some sauted, some steamed, some just tossed in a salad with some olive oil and balsamic vinegar or dipped in a dip. Lovely spring food always makes me happy. :)

Try raw brussel sprouts. I cannot stand them when cooked, but raw in a salad is fantastic. If you like raw cabbage you will be pleasantly surprised by the taste of fresh raw sprouts.

Love all of these, as well as field greens such as mustard greens and kale. As the weather here has gotten warmer, it's time to make a pot of cream of asparagus soup, which I like served cool. Okay, I just made myself hungry.
