Radish Recipes For Spring

Many vegetables take the spring spotlight: asparagus, fresh peas, and fava beans, among others. And then there a few humbler ones that fall to the wayside, like small bright-red radishes. Many people don't give a second thought to radishes, more or less ignoring them in the market. But it's just not right, and we're going to right this wrong.

Besides just eating radishes raw with salt or on a piece of buttered bread (a HuffPost Taste favorite), radishes can add a lot of interest to recipes, like a great crunchy texture and peppery, spice-y flavor. I like to add finely diced radishes, green bell pepper and green onions to cottage cheese. I have not had it in a while, so I need to go buy some fresh radishes.

My son in Texas is a very good cook. He visited me with his five year old son this past weekend. It was funny to see a five year old eat his way through San Francisco. This kid was amazing. He sampled raw oysters at the ferry terminal, grilled anchovies in Half Moon Bay, and loved Lobster rolls there too. He is fearless. He only complained when something was too hot and spicy.

Have you ever tried a radish sandwich? If you have homemade bread this is really delicious, but, any old white bread will do. Take one slice of bread, spread with butter. Thinly slice enough radishes to cover bread... sprinkle with a little salt, and eat open faced. Delicious. This is also a good thing to do with cucumbers .... really good....just try it.

Don't forget that famous Tuna Casserole. Mix 2 cans of tuna, two cans of Cream of Mushroom soup, no water added, a can of peas, about 1 or 2 cups of crushed potato chips. Bake in a 350 degree oven for 30 minutes.
Like we say in Hawaii "Broke da mouth"

and if you really wanta kick it up a notch, cook it, then put it in a casserole dish, add a little bread crumbs sprinkled to the top, add some red pepper, bake for a bit...boom tuna casserole!

I have found that canned tuna...cheap or high priced now looks like MUSH...good for a cat MAYBE
I used to use Tuna alot years ago, but now I refuse to buy the MUSH

Believe it or not years ago when my kids were at home and I mean YEARS ago.....shame that our food stuff seems to be going down the tubes. When they were home you could open a can of tuna and it would and could be flaked out with a fork and you'd have chunks

That's from the skin and scales. It has a hue, and probably some of that got in with the meat.

Well, that's funny because several decades ago tuna was considered "bait". Noone really ate it, unless they were poor. Even worse Lobster was used for fertillizer, they still use the body of king crabs as that. Endentured servants in MA in the 18th century were fed Lobsters but they put it in the agreement no more that twice a week. Now of course it's considered "gourmet".

when I was 10 my grandfather made me eat Spam. Afterward, I went outside to play with my neighbor. As soon as we hit her back yard, I spewed Spam everywhere. Her chickens gobbled it up.
I can't get that memory out of my head...and Spam will never pass my lips again.

Want to make a great salad for summer? OK.
Cook some elbow pasta al dente, coo them under cold water and rinse completely, add a can or two of tuna, drained, one can of mixed vegetables, drained, some onion powder. Mix everything with mayonnaise to taste. Also add a few boiled eggs sliced. Mix everything gently. Cool in the fridge a while. You will remember me!

Here's another good one. Cook some small elbow macaroni, cool under cold water, add a couple cans of solid albacore tuna, can of red kidney beans (rinsed off), chopped green onions, hard boiled eggs smashed up, sliced black olives and mix with a good quality mayonnaise (enough to cover everything.) Also add some salt, pepper and garlic powder to taste. Enjoy.
