Pie Recipes: Our 60 Favorite Takes (PHOTOS)

Despite its simplicity, there's something special about pie. There are no fancy layers or pretty frosting. With pie, you can just take any type of filling (fruits, nuts, custard, cream, chocolate, or whatever you happen to have on hand), place it in a tender pie dough, and just like that you've got an amazing dessert.

Because once it all bakes together, the result is a thick, sweet filling encompassed by buttery and flaky dough. What more could you want out of dessert -- or life, really? One of the things we like best about pies is that they can look just as impressive as cakes, but are a lot less of a hassle. And, they taste just as good. It's win-win. (Especially if you've got ice cream to serve with it).

How could you start an article with the comment no layers and icing yet the first photo of a pie being layered and iced, all be it with egg? It got worse with many more examples. The majority of these pies looked dreadfully unhealthy. So many missing classic, healthy pies that made it "American," include tarts, as you did, and still more classics missing that women ate and still remained unchallenged in remaining thin (as was the fashions of the times). I've been making pies since I was three, a child on a great American farm that had everything to make pies from apples to apricots, morels and black walnuts, paw paws and berries galore. Not to mention the fresh milk to churn and the bundles of hay upon which to sit, eat and dream. I didn't get to the vegetable pies and neither did you.
