Toaster Oven Recipes: Our Readers' Impressive Creations

Cooking isn't easy -- even home cooks who love spending time in the kitchen know that. It takes practice, patience and a great many failed dishes before you can confidently make a meal you'd be proud to serve to others. But cooking in a toaster oven, that's even more challenging -- and a challenge it seems many people are willing to take. Whether out of necessity (lack of space), curiosity or just trying to conserve energy, people have cranked many impressive dishes out of their tiny toaster ovens -- some have even made a complete Thanksgiving dinner.

I live alone and I think I'd die if you took away my toaster oven and microwave! The last time I used my oven was around Easter.

I got a convection toaster oven and it cooks faster than a traditional toaster oven...usually have to run it at about 50 degrees lower than a recipe! It's also oversized (can easily hold a 9" pie dish), so I can cook cakes and pies with no problem!

100% agreed! If you want to cut your electricity bills and avoid warming up the house even a little, add one or two induction cookers to the mix. The only time you'll use your oven when you're having the rels over for special occasions.

I've made classic baked lasagna, but the pasta can get dried-out and chewey. The new way I came up with for making it is mind blowing....Alfred-

I've made lasagna in my toaster oven many times (never use my big oven except for pizza) and it never gets dry, however I've always used a recipe that calls for using the pasta without boiling it first. Of course, it also calls for more liquid and then I cover it with tinfoil until the last 20 min or so. I got my recipe off a box of lasagna about 35 years ago but I'm sure Google would come up with others.

Boil the lasagna noodles like you would any pasta, drain, add dash of olive oil or butter to coat gently. Make the meat part of your dish. My fave is Italian sausages with Holland bell peppers and Vidalia onions in Marinara sauce. Allow your cheeses to come to room temperature.

Start with a warm serving plate, around 120 to 130 o F is good. Arrange some of your hot lasagna noodles onto the plate in a fancy pattern. Spoon the steaming hot sausage and peppers sauce over it and arrange chunks of Recotta on it. Another noodle or two, more hot sauce and top with shredded mozzarella and a dash of Parmesan .
