We would very much like to insist that no vegetarians, vegans or others similarly sensitive to meat processing watch this video. (Go watch this one about mushroom processing instead. Seriously, don't say we didn't warn you.)
That said, we think this video of an automated lamb-dismantling factory is absolutely fascinating.
Nothing will ever replace a butcher's intuition, attention to detail or skill at their craft. But, if you need to break down a factory's-worth of lamb carcasses, you might need some robots. The most amazing part about this assembly line of computerized butchers, is the use of x-ray technology to find individual bone placement in each animal, to maximize the efficiency of the cuts. Well, that and the careful choreography of the leg-jointing portion that starts at the 4:30 mark. That robot has got some moves.
