Not all of us have space for an ice cream maker in our kitchens -- it's an appliance that really only gets used one season of the year. So what do you do when you're craving homemade ice cream? Make ice cream without a machine, of course. There are many wacky ways to do it, like using a plastic bag (see the video in the last slide). But our recipes use standard methods that are easy to master (and are probably less messy), like freezing your mixture in a tray or dish and scraping it every so often, or using a food processor to create an ice cream-like texture from the frozen mass. The recipes in our slideshow below include granitas, sorbets, frozen yogurts and the impressive semifreddo.
