Ribbon salads are light, fresh, simple to make, and most importantly, they're gorgeous. They're composed of thinly shaved vegetables and can be made with the simplest of kitchen gadgets: a potato peeler (though a mandoline will get the job done nicely too). No-cook ribbon salads let you eat summer's produce raw; so when it gets really hot in your kitchen, you can still enjoy your asparagus, fennel and squash without having to turn on the stove.
