Did you know that over-fermented coffee can taste like a strange fruit, and under-ripe can taste metallic, or like a green pepper?
These are the tidbits you can learn hanging around Joel Pollock and his 1927 Probat Perfekt Roaster at Panther Coffee in Wynwood. With his wife Leticia Ramos Pollock, the pair has made Panther Miami's craft coffee go-to, lovingly crafting an array of precisely-made drinks for customers at their graff-covered box on NW 2nd Avenue and supplying top local restaurants with brew.
Fortunately for Miami, the Panther empire is expanding. The company is shortly opening a second location in Sunset Harbour's new retail/garage development, which is great news for Beachers. Watch above to hear Joel explain their operations, what makes a good bean, and share what his first-ever coffee job entailed.
