If a Thanksgiving dinner doesn't have a bird, is it still a Thanksgiving dinner? The answer is a hard yes.

For many diners, all the turkey talk is moot. Think about it: The classic Thanksgiving spread is largely vegetarian as it is. On the table goes the best of fall's harvest -- roasted winter squash, sweet potato casserole and cranberry sauce to boot. So why not stick to a theme that's clearly working so well?
