Nutritionist and host of The Cooking Channel's "Healthy Appetite" Ellie Krieger insisted that nutrients are soluble, and the less water you use while cooking, the less vitamins you will lose. When Ellie joined me on Mondays With Marlo, she suggested steaming or sauteing your vegetables. Sauteing can be especially beneficial, since the oil used will make the fat-soluble nutrients easier to absorb.
