We love eggs for many reasons -- scrambled, fried, sunny side up and poached to name a few. They make putting a meal together so simple, whether it's breakfast or dinner. But eggs just might be at their best when soft boiled. Soft boiled eggs are the magic that happens right before they become hard. (Not that we have anything against hard-boiled eggs.)
When a soft boiled egg is made just right, its whites are set but the yolks are still creamy and rich. And when it's cooked this way, eggs can easily be used to top just about any dish -- and make it better.
