Confession time: we go crazy during sour cherry season. One of our editors buys a box every time she sees one to pit, freeze and use all year long. Another one of us just gives herself a summer-long stomach ache, eating as many of the aggressively tart little treats as she can fit into her face.

If you've never had a sour cherry, picture eating a regular cherry that's half lemon. "Sour" is neither a misnomer nor an overstatement -- if you don't like sour things, these are going to freak you out. However, if you enjoy Bing and Rainier cherries, but wish they were just a little more acidic, these are the cherries for you. These tiny, juicy fruits lend themselves perfectly to not-so-sweet desserts, liquor infusions and also savory applications. We will probably never find enough ways to enjoy eating them during their short season. (Fair warning, in order to cook with a lot of cherries at once, invest in a cherry pitter -- it will change your life.)
