For this installment of Inside the Chef's Kitchen we interviewed one of my personal TV chef crushes - Duff Goldman. I've been a fan of Ace of Cakes on the Food Network for many years, and when I met Duff at Feast Portland earlier this fall he was as genuine, funny, and talented in real life as he is on TV. If you haven't seen his show, it follows the amazing cake styling team at Charm City Cakes in Baltimore, MD and ran for ten seasons.
So yes, he is "that cool cake guy", but I was excited to learn that his culinary history and training goes back a lot further than just cakes with fireworks. Trained at the Culinary Institute of America, Duff has worked at several nationally recognized restaurants including the French Laundry, Todd English's Olives and the Vail Cascade Hotel. When he isn't baking he's also a talented artist and musician.
For those on the west coast, his team just opened a second bakery location, Charm City Cakes West in Los Angeles, CA.
