Once the holidays are over, the fanfare has died down and our weeks of eating and drinking revelry have caught up with us, we start to look around at winter produce and panic a little -- is this all we get? Before you shun your cabbages, your beets and your potatoes, we'd like to remind you that even those stalwarts of the winter pantry have delightful variations.
One such variation is the fingerling potato, arguably the cutest potato to ever exist. These slender, young things cook quickly, have a pleasantly waxy texture and a thin skin that you don't even need to remove for most preparations. Don't worry, we'll get through winter deliciously.
