Drinking tea is lovely and all. We have nothing against this time-honored tradition. We like our tea iced, Thai style and even the proper British way. But we've got 18 reasons why you should forego your next cup of tea, and they all involve dessert. Instead of drinking your tea, you should bake with it. From Earl Grey to chia, green tea to rooibos, baking gets a lot more creative when you add tea.

We love tea-spiked desserts for their delicate and versatile flavor. Tea makes madeleines pop; it gives chocolate mousse a little pizzazz; and it makes ice cream shine. It even takes roll cakes up a notch.
