Ricotta Recipes To Make All Year Long

Half Baked Harvest

Ricotta is one of those ingredients that's impressively versatile. From appetizer to pasta to dessert, this creamy cheese is as adaptable as it delicious. Ricotta can make a basic dinner dish exciting; it can transform your pancakes into something delightfully light and fluffy; it can also turn into melt-in-your-mouth Italian dumplings that you can't stop eating. As unassuming as ricotta is, it really has a lot of tricks up its sleeve.

Surprisingly, this Italian cheese is also easy to make at home. (And we have the recipe from one of the best Italian restaurants in NYC, il bucco alimentaria.) If you're not up for the challenge, or just don't have the time, go buy yourself a tub and make these recipes below. You will be happy you did, promise.

Here are 30 times ricotta made recipes (and life) so much better.
