Avocados and ranch dressing are two foods that inspire cult-like devotion; together, they are pretty much perfection. Try this delicious and nutritious homage to this cool fan favorite -- it's great over a salad or grilled chicken, or as a dip for fresh veggies.
Avocado Ranch Dressing

Makes 1 1/2 cups
1 avocado, pitted and peeled
2 garlic cloves
2 Tbsp. fresh lemon juice
1 Tbsp. olive oil
1 c. vegetable broth
1 Tbsp. onion powder
1 tsp. sweet paprika
3/4 tsp. salt
1/4 c. fresh dill, chopped
Place avocado, garlic cloves, lemon juice, olive oil, vegetable broth, onion powder, paprika and salt into a food processor. Blend until completely smooth.
Add the dill to the food processor and pulse, just until the dressing turns a brilliant green with flecks of dill throughout.
Seal tightly and refrigerate until ready for use.
