Huevos Rotos is a classic Spanish tapas dish meaning broken eggs - it is as ubiquitous in Spain as burgers are in the US. But chef Jonah Miller at Huertas in New York is taking the classic and making it his own by creating his own pasta-like riff called Huertas Rotos. He makes 'noodle' out of potatoes, adds a chorizo vinaigrette and a poached-in-the-shell egg to create an unforgettable dish.
