The key to raw living foods is nailing the spices and flavor along with texture. You may think it's weird to use carrot pulp, the by product of carrot juice, but it has that flaky texture similar to fish. The fiber of carrot pulp also works great for making gluten free, wheat free, raw food 'bread' dehydrated at a low temperature.

Save-The-Salmon Patties with Hollandaise Sauce are terrific for Thanksgiving Dinner. They are made with sunflower seeds and carrot pulp, which give these cakes the texture of fish. Flavored with fresh dill, lemon, onion and the sea vegetable dulse, these cakes will be enjoyed by the finickiest eaters. Topped with a lemon almond hollandaise, they're delicious.

This is a new bread I've discovered, Cajun Bread. Similar to the a slice of pumpernickel, spiced with cajun spices, yet sweet from carrots, this bread is full of beta carotene and antioxidants. Enjoy as a sandwich, toast, or on it's own.
