These Mini Rainbow Donuts Are the Cutest Things You'll Ever Make

Here at Brit + Co, we have a tendency to see things in technicolor. We've already brought some rainbow magic to bread, fingernails, grilled cheese and even mac and cheese. One thing that has been missing out in the ROYGBIV food spectrum is a sweet breakfast or dessert item. Since donuts are one of our faves, the decision to whip up a dozen mini rainbow donuts was obvious! You donut need to worry about complicated fryers or ingredients, these adorable little guys are really easy and only took 30 minutes to make, including baking time. (You can even make this swanky donut DIY while the donuts bake.) Let's do it!

Mini Rainbow Donut Ingredients:

-- 2 cups all-purpose flour
-- ¾ cup white sugar
-- 2 teaspoons baking powder
-- 1 teaspoon salt
-- ¾ cup milk
-- 2 eggs, beaten
-- 1 teaspoon vanilla extract
-- 1 teaspoon butter, softened
-- assorted food coloring

Dipping Glaze Ingredients:
-- 1 can pre-made frosting

Instructions:

1. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius).
2. In a large bowl, mix flour, sugar, baking powder and salt.
3. Stir in milk, eggs, vanilla and butter. Beat together until well blended.
4. Divide batter into five bowls. Drop three drops of food coloring in one of the bowls and mix until the batter is completely dyed. Drop different colors of food coloring in the other bowls of batter until you have five bowls of different colored batter.
5. Pour each colored batter into a plastic bag. Squeeze the batter into one corner of the bag and snip the corners of the bags using scissors. Pipe each color of batter into a greased mini donut pan, creating a wheel of colors.
6. Bake for 8-10 minutes in the preheated oven, until donuts spring back when touched. Allow to cool slightly before removing from pan.
7. Scoop the frosting in a microwave-safe bowl and microwave it for 30 seconds to melt the frosting. If the frosting isn't totally melted, keep microwaving it 10 seconds at a time until it's fully melted.
