David Chang is chef/owner of Momofuku Noodle Bar, Momofuku Ko and Momofuku Ssäm Bar in New York City. Chang has taken the food world by surprise, he has already won two James Beard awards and both Bon Appeitie and GQ named him chef of the year in 2007. Here is an excerpt of our conversation:

Luckily, I saw the entire David Chang interview on PBS. What a joy to hear Chang talk about his love of food, his philosophy about food preparation, and encouraging his employees to pursue career growth. When I'm in New York, I'll visit at least one of his restaurants. Can't wait.
