How To Kill And Eat A Lizard

Over the course of 30 years, the island of Boca Grande in Florida went from having zero iguanas to over 10,000. This invasive species was making it impossible for native plants and animals to survive. The island finally decided to do something about it; they called George Cera. We went on trip around the island with this hired gun. And of course we ate some lizard.

Daniel, I'm curious, what type of rifle was that he used to dispatch the lizards? I know nothing about firearms but it seemed to me more like an air rifle.

Fascinating! It looks good fried up in a little butter. I'd definitely try it.

In New Orleans they were trying to get people to eat nutria as well but it doesn't work out so much. There are some though who make it into a gumbo :)

This concept of eating this way reminds me of the book "The Scavenger's Guide to Haute Cuisine".

I prepare lizard similar to quail. I marinate in lemon and garlic with rosemary and grill. I've only had the chance to cook it twice but it was delicious.

It doesnt look like my kind of meal, but just curious -- are lizards/iguanas a common meal in other cultures? ie. how likely is it that these little guys will become a food staple in the US?

these were small lizards - most of the bigger ones had already been killed. But the small one had enough meat for a good sized amount of protein for one person, certainly more than a frog's leg

he was really responsible. There were lots of places where lizard's were near houses, or there was a chance that the shot could ricochet - so he didn't shoot
