A Taste Of Vietnam

Posted: 02/21/2012 9:07 am

WARNING: do not watch if you are hungry and are without easy access to Vietnamese food. We are interrupting our weekly Perennial Plate episodes to bring you a cool little video we made. Last month we were invited to go on an Intrepid Travel trip to Vietnam for 2 weeks. Our assignment was to document this food focused journey across the country. We are really proud of the video and wanted to share it with you. Thanks and look out for Vietnam related blog and pictures this week. And here is a winter version of a classic Vietnamese recipe.

Hey Daniel, I really disappointed with your clip. I'm waiting for Southern Vietnamese cuisines but what shown in this clip really disappointed. There are tons of cuisines can be found in Southern Vietnamese; however you introduced just a few southern vietnamese's cuisines, so disappointed.

I have come to think Vietnamese is the premier cuisine of the world. It is so tasty and sensible, varied and intelligent.
Anyone wanting to try should get the book "Into the Vietnamese Kitchen" by Andrea Nguyen. The catfish in carmel sauce is excellent.

Great video! But if the music was meant to align with the content of the video (which it clearly is), it would've been more prudent to use Vietnamese music, not Japanese. Then again, it seems we Westerners still wouldn't care to know the difference, as long as it sounds exotic and Asian, right?

Very exotic editing. Quite enticing! However *I* just returned from Ha Noi+ after 2 weeks and, although I pretty much could 'see' every experience/frame that you shot - location by location - it doesn't dispel my attitude, albeit some nice HD video, in recognizing the VietNam I lived. Dirty, grey, loud, dusty, wearing. Quite the headache. And not the nice kind.
What, there was, basically, Banh Mi, Chicken skewer, and Pho. What? Bunches of sweet basil, lemongrass, cilantro (quite literally 'thrown in'). Oh, some nice Vietnamese spring rolls!
Nothing I can't get "round the corner" (I happen to live in Honolulu) maybe for a US$ or 2 more. Perhaps others not so 'lucky' might relish the thought...
1. More crazed, head on, traffic shots could be relevant.
2. A panoply of cheap, local, beers.
3. The generally excellent coffee - more than the Viet/condensed milk kind; another classic leftover from French/Indochine.
4. The french bakery's do a mean Croissant too.

P.s. Oh yeah, Ha Noi, perhaps the ONLY place in the world I might actually recommend people NOT to go to! (ok, the coasts and Ho chi minh/Saigon are more worth the look.)

I am fortunate, where I live we have Vietnamese, Thai, Lao and Hmong restaurants all over town. I just wish there was a Cambodian one their food is good too.

Thanks for this posting. I spent some time in Viet Nam but never fully appreciate the food. What I did enjoy was French influence which made it different than that of Cambodian, Laotian and Chinese. I wish I had it to do all over again. Perhaps this series will help with that.
