I have been lucky to have eaten great food all over the world, but I just don't think you can beat a roasted chicken as a "comfort food". And the smell of a roast on a Sunday afternoon is hard to beat.

We do not eat a lot of meat, but when we do get the urge I buy a big roaster from a local organic farmer. Simple herbs and seasonings, in a 450 degree oven for 90 mins + or -, depending upon size. Let it rest a bit and then serve with the fixins of your choice.

Next......... Take the leftovers and make a soup. It's all good eating and not expensive when you consider how many great meals comes from one bird.
