In a video posted Tuesday, the American Chemical Society’s Reactions channel boiled down the key points of how to cook pasta just right.

You’ve probably picked up pointers in the kitchen already, but this time put your trust in science to get the job done.

The clip points out that achieving luscious al dente pasta comes down to “manipulating the protein and starch interactions” just so.

To that end, the video recommends that you give the pasta space while in a rolling boil and add salt, not oil. But that’s not all.
