7 Summer Soups

Posted: 07/23/2012 5:42 pm

By now you've eaten salads aplenty and barbecued to your heart's content, so why not try something a little different -- a summery soup, perhaps. There's gazpacho, of course, but it's time to let seasonal produce like corn and cantaloupe shine too. These seven simple soups will do just the trick. Make a big batch for dinner tonight and save any leftovers for an effortless lunch tomorrow. Brought to you from the spirited home cooks' community at FOOD52.

This is an earthy, moody corn chowder that alternates between sweet and hot. -- A&M
Get the recipe
Photo: Sarah Shatz

  • Green Chile, Chicken, Posole Soup

  • Rick Bayless' Tortilla Soup With Shredded Chard

Don't expect it to be spicy -- pasillas (also called chiles negros) do something more surprising: they're dark, smoky and fruity. -- Genius Recipes
Get the recipe
Photo: James Ransom

  • Cream Of Roasted Tomato Soup

I roasted the tomatoes with a few cloves of garlic, then mashed the roasted tomato pulp with cream and cream alone. And then because I couldn't stop myself, I made a rosemary-and-thyme oil to sprinkle on top. -- Amanda
Get the recipe
Photo: Sarah Shatz

  • Chilled Cantaloupe Soup

When you taste this soup, you first get the sweet fruit, which seems impossibly bright and refreshing, and this is followed by waves of cinnamon. And don't forget the mint and yogurt swirls, which aren't merely decorative -- the yogurt enriches the soup and the mint adds a note of freshness. -- A&M
Get the recipe
Photo: Sarah Shatz

  • A Bowl Of Mango Sunshine

If you can push the button on a blender, you can make this soup! The ingredients whizz together in no time. Sweet, tangy and creamy, this make-ahead soup is perfect for summer entertaining and lazy, hot afternoons alike. -- A&M
Get the recipe
Photo: Nicole Franzen
