There's one on the Food52 site that is awesome! Its called Summer Squash salad with Couscous. It uses the large pearl couscous (altho I've used rice since my husband can't eat too much pasta). Super easy to make - has green and yellow squash, pistachios and golden raisins. A honey dressing with lots of mint. Tastes best at room temperature - so fabulous for a picnic. Try it - I'm postive you will make it a regular. The BEST ever!!

I have a recipe that's very similar to the black bean salad. It goes great with tortilla chips. We call it 'crack dip' because it's so addictive.
