5 Family-Friendly Weeknight Dinners

If there's one thing for certain when you're cooking for a family, it's that it's hard to please everyone. What one child loves, the other inevitably refuses to eat. That's why when I discover a dish that the whole family enjoys, it's practically cause for celebration. Here are five such dinners that have made it into our regular rotation -- and they're easy to boot!

I am wondering why they never mention Fish Tacos, they are great.

I usually make chicken tacos simply by poaching some chicken breasts , shredding when cool and putting them in a pan with some taco seasoning and water and simmering until liquid is absorbed. Serve with lettuce, cheese, sour cream, salsa etc. Or I wrap them in tortillas with some mexican rice and bake until heated through and serve with the lettuce etc. Great way to use left over chicken from a previous meal.

The chicken taco recipe given here is too much trouble and looks nasty. For great easy to make chicken tacos: Use 1 chicken breast (with skin that has chicken fat for better flavor) per 4-5 tacos and boil in canned chicken broth or broth from boullion cubes. When done, remove chicken. save the broth and strain it. After cooling the breast a in a bowl of cold water so you don't burn your fingers, remove skin and bones and shred the chicken. Put the shredded chicken in a fry pan, add enough broth just to cover and add a can of drained green chiles (I use hot, but medium or mild can be used depending on preference. I don't use jalepenos because of the difference in taste.) No need to salt or season as the chiles and chicken broth give the chicken all the flavor it needs. Cook down the mixture until the broth in pan has evaporated. (As the broth gets low in the pan, watch and stir so the meat doesn't burn when the broth starts to go.)

You can then put meat in taco shells and top with whatever you want (shredded cheese, lettuce, tomato, onion, sour cream, or guacamole). A quicker way is to use a can of precooked white meat chicken in the fry pan with canned broth and chiles. (A little less tasty than using fresh chicken.). Everyone always likes these and making them isn't a major production.

The shrimp dish looks delicious! I'm going to give it a try this weekend. My family's favorite taco filling is fish. I usually lightly dust tilapia with a flour and taco seasoning mixture and brown it lightly in a nonstick pan with olive oil pam. When it's finished, I add a sqeeze of lime juice and chopped cilantro. Layer fish, green onion, avacado, tomato and red cabbage in a crunchy, blue corn tortilla shell and it's delicious and really colorful. This is my daughters' favorite way to eat fish.

I usually have meatballs at home. They make quick meals. To make a meatball hero:
Take a club roll or hero. Slice the bread in half and put some fresh mozzarella on the bread. Bake in the oven until mozzarella melts. Add hot meatballs, fresh basil, and your favorite spaghetti sauce.
