I recently stopped in at Dough, the acclaimed artisanal doughnut shop in Brooklyn. I went there, talked to its adorable owner, and picked out some doughnuts. I didn't taste them though, until afterward. I wanted to judge them fairly and with total candor.

I like Michael Lomonaco, of Porterhouse New York, a lot. Who doesn't? But when he told me we were doing surf and turf, I hesitated. I never liked the dish. But look at the smoke, the violence, the searing! Everything about this dish, and this video, was exciting for me.
