The savory lollypop trend died gasping messy death about 5 years ago, thank god (smoked salmon and chevre are delicious, somehow, when eaten in one bite at the end of a stick, not so much). I do love me some boudin noir, though.

The presentation could work as a passes hors d'ourve, but goo luck selling it to the mother of the bride.

I do like many kinds of blood sausage, but calling this a popsicle is perhaps a disservice to the dish. A popsicle brings to mind a cold, sweet treat from childhood. The chef might have created it in another physical form and name, but then again he might not have attracted the media attention. And yes, using the whole animal is desirable, but only if people want to eat it.

I would eat it if I had no idea what was in it beforehand. It looks good. Thinking about eating blood makes my stomach turn a bit, though.

I have a hard time getting my mind around this, but the chef makes an EXCELLENT point about sustainability by using this often wasted "byproduct."

But have eaten cooked blood w/ scallions w/ Chinese friends and blood sausage w/ Spanish friends. If you eat a steak and wipe up the juices w/ a piece of bread, you are eating blood. Blood is a great source of protein and iron
If you are going to kill an animal, honor it by consuming as much of it as possible

Common misconception-the juices from steak and other cooked meats are actually protein, blood is fully removed from a beast at the abattoir. I have had cooked blood, and blood sausage also, both were divine.
