Today as I went through the buffet at Whole Foods I just had to put a little macaroni and cheese on my plate. The other night I made a box of natural rice macaroni and orange cheese and both me and my dinner companion's faces lit up.
So many of us are very concerned about our health and what we eat. And, it is important to make wise choices daily.
When I snack, I eat raw green beans, sugar snap peas, carrots and raw almonds. I do my best to remember to drink several glasses of water each day and only eat a small bite of sweets when I indulge.
But, the reality is that we all have foods that, for some reason, have warm memories or feel soothing to eat. For me, it is macaroni and cheese and I have decided it is okay to enjoy it once in a while without any guilt. I also look for the version of the comfort food that is as healthy as I can make it. So, the brown rice pasta and organic cheese with almond milk is how I feel best about eating my favorite comfort food. However, I do order it out once in a while and really dont want to know how its made.
Why do I like it? I was always excited when my mom made macaroni and cheese and, personally, I think cheese is super fun because it is stretchy. How often do I eat it? Hmmm...honestly? About 2-3 times a month. I can't bring myself to say weekly although I might.
