Broccoli Cake: A Healthy Dish Picky Kids Will Love

Warmer weather has paid us a visit. Ahh, those warm summer days filled with family picnics, summer vacations and poolside fun with friends. The upcoming months means warmer weather and people of all ages are coming out of hibernation. Outside you see the children becoming more active with swimming, biking and other fun summer sports.

Of course all these outdoor activities definitely increase everyone's appetite. With this increase in appetite also comes the temptation to pull out the junk food. So now is the time when moms all over need to get creative with their healthy cooking.

Try broccoli cake for your next family dinner. Is it really a cake? Not really -- it is more like a french pastry that tastes as scrumptious as cake. I had to use the word cake in this recipe because what child doesn't LOVE cake? With four little ones at home, I have found that giving dishes fun names really does get your children excited about the meal.

This recipe is so fantastic because you can replace the broccoli with any vegetable or even a mixture of vegetables. This delightful pastry bottom pairs beautifully with cooked carrots and even spinach! The best part about this combination is that your kids will be begging for more of this creative healthy dish. We have paired many vegetables on top of this pastry, but our favorite so far is the broccoli. Plus, broccoli is a super green veggie and also contains a chemical that helps strengthen the immune system.

Below is the written recipe, which is all organic and very simple to make. The recipe is definitely easy enough for your kids to help. Click on the video for a step by step guide.

INGREDIENTS FOR PASTRY

1 stick of light salted organic butter
1 cup of organic flour
1 tablespoon of organic sugar

Mix together and bake at 350 degrees for 20 minutes. You can mix with an electric mixer or a food processor.

Place cooked broccoli on top and sprinkle with low fat Organic Valley Mozzarella shredded cheese.

Voila! Your children will become broccoli lovers for life.

OMG people! This is a RECIPE, not a dissertation on parenting or what to feed your kids. Make it, don't make it. Like it, don't like it, but don't try to make this article about more than it is: a RECIPE!

Thank you!! You are right on. This is simply a recipe! Children get tired of eating the same things all the time. I am lucky because my children are healthy eaters. However, there are many children out there who REFUSE to eat vegetables or other healthy foods. That's great to sautee vegetables, but what good does it do if the vegetables sit on the plate?
Most concerned parents try to find creative ways to get their children to eat healthy. I just wanted to share a recipe that might help parents who have extremely picky eaters at home!! :)

Your definition of "cake" and "French pastry" must be very different from mine. Why don't you just call this a 'broccolli cheese biscuit'.
Telling your kids this is "cake" seems a tad disingenuous.
Also, any recipe that involves a quarter pound of butter and one cup of flour, no matter how organic, cannot be "healthy".

Do you have picky kids? Calling this cake may be stretching the truth a bit (which the author admitted), but to a picky kid.....CAKE is what they like!

As far as healthy, probably not (with the exception of the broccoli, to the extent it is cooked), but as with all things, moderation is key even WITH the butter.

The recipe does have butter and sugar, however it is all organic with no preservatives and pesticides. Even though it is higher in fat, it is better than the alternative boxed or packaged foods with fillers, pesticides and preservatives.

As for the name, I agree the recipe is not cake, but sometimes it is fun to make up exciting names for food with your children. They love it!! :) Thanks for your comments!!

No one's pretending it's a sweet cake. It's not Seinfeld-ized, hiding the broccoli in a dessert. It's just semantics. This is to cake what chicken pot pie is to, say, apple pie. Savory tortes and tortas are commonplace in other countries.

Changing the name of a dish in order to make it appealing is hardly a sign of the apocalypse.

Putting broccoli in cake to get your kids to eat their vegetables is another sign of the apocalypse. Here's a suggestion: put the adults in charge of the family, and demote the kids to being kids. Tell them to eat their broccoli or they won't get any cake. When did people become afraid to tell their children what to do?

What a cute family with all that pink!

Another good broccoli recipe is steamed broc with cheese melted on it as a sauce. My nephew eats a family size bowl of this.

I have a better idea, you just lightly sautee your fresh veggies in a little olive oil and say supper's ready. If you are starting them off in life to enjoy vegetables then you don't need to pretend it's cake.
