Sometimes you want something as a side dish that is filling, satisfying, yummy, and just quick as can be. That would be couscous. What is couscous? It's a teeny-tiny little pasta-like thing that originated from the food cultures of Africa and the Middle East. You can get mixes in the store and pay more for inferior taste, or you can make a quick and simple version at home that tastes much, much better and is more affordable. It goes with almost anything, and kids love it, too.

I really like the Shiloh Farms organic couscous, which I find at my favorite local health food store, Healthy Alternatives, in Trexlertown, PA.

Quick and Easy Couscous

Ingredients:

3 cups water
1 cup organic couscous
2 Tablespoons butter
¼ cup Romano cheese
Salt and pepper to taste

Directions:

1. Bring the water to a boil in a saucepan.

2. Add the couscous and turn the heat to a simmer.

3. Simmer for five minutes.

4. Add the butter and cheese, and stir.

5. Salt and pepper to taste, and serve!
