I don't know about you, but I love when spring comes around and I can start thinking about all the fresh fruits and vegetables that are coming into season. Strawberries, artichokes, pineapples, avocados and asparagus are all in season right now and ready to take center stage on the table. In particular, I really love getting all the veggies together and putting a little olive oil, salt and pepper on them, putting them on the grill and making a colorful spring spread.
I am mostly known for my Italian cooking (Mom was Italian,) but I love to try all of the different ways in which the ingredients of spring can be served up. And not just with Italian olive oil! And there are so many inspired recipes for light soups, fabulous salads and fresh meals that are very simple -- so simple you can whip them up at the end of the day when you're watching the news.
So, in the spirit of spring -- as the trees are beginning to bud, the flowers are starting to appear and the days are getting longer -- we've gathered some wonderful recipes using the ingredients of spring to inspire us all to keep it fresh and healthy this season!
