The words "hospital food" usually inspire thoughts of rubbery jello and syrupy fruit cups. But the St. Luke's University Health Network in Easton, Pa. is doing its best to change that. In the fall of 2013, it teamed up with the Rodale Institute.
Coming together to start the discussion is the first step. Hospitals, doctors, registered dietitians, chefs, patients, and family members all need to be involved. Progress will follow and hopefully programs like these will become the new normal.
I too sacrificed my health by devoting most of my waking hours to my company. But I am now returning to the things that have nurtured me in the past, including exercise, meditation, and nutritional food.
The quality of food fed to seniors by assisted living facilities and senior centers will continue to plummet unless we begin to place the same level of importance and social value in what and how we feed them as we do our children.
