Chef Anthony Sicignano has made quite a name for himself. Having worked at The Breakers Palm Beach since 1993, he is currently the Executive Chef, overseeing over a hundred chefs at nine distinct restaurant concepts on the hotel property. Chef Anthony and I sat down at HMF at The Breakers and, over some small plates, discussed his career, his cuisine, and how he does it all.
What comes to your mind when you think of taking a beach vacation in South Florida? Miami, right! But there is one place in the Sunshine State surrounded by the unparalleled natural beauty, beautiful beaches, ritzy beachfront mansions, celebrity residents, shopper's paradise, year-round sunshine and more sand and swaying palm trees than you could imagine. It is Palm Beach located on the southeastern coast of Florida.
As I approached the façade of the mighty Breakers Hotel, I often would wonder what it must have been like when this extraordinary structure rose from the uninhabited tropical wetland during the last few months of the 19th century. Little did I know that this famous landmark would become so familiar and enjoyable to have as a next door neighbor.
