It is no secret that I love meat. From time to time, however, I try to eat meals that are based on vegetables, tofu, or beans. Meatless Monday is the perfect reminder to do just that.
What are your favorite meatless meals?

Most people I know either love or hate tofu. I wasn't a big fan of tofu when I tried it, but quickly figured out that tofu is just a blank canvas: it takes on whatever flavor you pair it with. One of my most popular recipes is <a href="http://www.mangotomato.com/2011/07/sweet-sticky-spicy-tofu.html" target="_hplink">Sweet, Sticky & Spicy Tofu</a>. The bland tofu gets elevated by being combined with the flavors of Hoisin sauce, soy sauce and red pepper flakes. You can also add fresh ginger and garlic.

Regular risotto boiled in mushroom-broth, some extra mushroom (different viarieties) in the risotto after having backed them in some olive oil. Cook for the specified time.
After the risotto is finished I add some backed pine-nuts (for the crunch) and some grated parmezan cheese. And one or two very thin slices of truffle.
Some green lettuce, tomatoe, cucumber spinkled with a few crushed walnuts on the side and you have a terrific meal for a sunny evening.
