How cute is this? These watermelon-lime jello shots are perfect for a summer party! We had one of our fantastic interns, Emma, make a batch this week at the office just in time for Happy Hour on Wednesday. (Interns at Plated don't get coffee, they get to make Jello shots!) Try out the easy recipe below -- adding fruit to your diet couldn't be easier.
Watermelon Jello Shots Recipe
Makes 40 shots
- 10 limes, pulp removed
- 1 box red Jello
- 1 cup boiling water
- 1 cup cold vodka
- Mini chocolate chips or black sprinkles if desired
Cut limes in half, and using a paring knife carefully remove the pulp from the rind. Once you have removed all the fruit from inside of the rind, arrange limes, cut side up, on a tray.
In a small bowl, mix 1 cup of boiling water to the Jello powder, and stir for 2 minutes until fully dissolved. Add 1 cup of cold vodka. Carefully pour mixture into lime halves, filling all the way to the top. Chill in the fridge for at least 2 hours, until the Jello is set.
Using a sharp knife, carefully cut each lime half in half again. We made "seedless" watermelon shots, but you can stick in mini chocolate chips or black sprinkles, if desired, for seeds!
