Winter root vegetables are some of my favorite ingredients to turn to in the kitchen so I was excited to learn about Diane Morgan's latest cookbook Roots: The Definitive Compendium with more than 225 Recipes. Not only does she provide new ways to work with those roots that are familiar to me, she also introduces many I have seen at the market but have wondered, What is that and what would I ever do with it?
