Cucumber Water

This is definitely my new favorite drink. While we all know we need to drink lots of water -- at least 64 oz/day, to be exact (especially when I'm living a mile above sea level), it's not always easy to do this. With cucumber water, however, I'm happy to report that I'm having some success.

It's so refreshing on these hot summer days (in the 90's here in Boulder) and looks quite elegant simply sitting on the kitchen counter or table, too.

Here's how to make it (it only takes 5 minutes):


  • Get a large glass pitcher or mason jar.

  • Thinly slice 1/2 of an organic cucumber.

  • Add cucumber and filtered or spring water to the pitcher, cover, and let it sit for several hours (try leaving it overnight).

  • Serve chilled (or I like to drink my water at room temperature).
