7 Soups and Stews for St. Patrick's Day

Posted: 03/15/11 09:24 AM ET

The national Irish holiday of St. Patrick's Day is just a few days away. This religious holiday is celebrated to honor the patron Saint Patrick where families would traditionally attend church in the morning and celebrate in the evening with music, drinks and food. Now, it is celebrated throughout the world with parades, green gear, and of course, drinking and feasting. For the holiday, I discovered 7 authentic soups and stews -- ranging from an Ancient Irish Leek and Oatmeal Soup to a Cheddar Ale Soup and an Irish Beef Stew as well as a healthy Irish Soda Bread to pair with the soup recipes. Check out the delicious slideshow to inspire your soup making this St. Patty's Day.

Irish Beef Stew
1 of 9
Traditionally a dish of peasant origins made from lamb or mutton, I created this rich and delicious Irish Beef Stew using a base of beef chunks, potatoes, and carrots. The soup also cooks in a base of onions, garlic, thyme, bay leaves, parsley and some dark beer to give it a complex range of flavors.

I went to the recipe site and think an ingredient was omitted from the list. At one point the instructions warned that boiling might cause the milk to curdle -- there was no quantity of milk listed.

It's ancient Druids, not Droids. :) Druids come from Ireland; Droids come from Silicon Valley.
