“I think that sweet potatos are an aquired taste.. I like them mashed and put in biscuts.. or pizza crust.. but straight, with this much sugar would probably put me over the edge. Thanks for sharing tho,, I need to find a copy of Jeff's cookbook. I enjoyed the PBS show when it ran.”

Why the Palin "Hate Affair" Will Backfire

Commented Nov 20, 2009 at 12:55:24 in Politics

“Exactly!! Palin is getting her support, in part, because she is the perceived victim. Many woman ( and men) like her style, because they don't look deep for any substance.

My first thought was that Amy was a PUMA.... and that Sarah was one way to keep these messages going.

But what is scary is.. that she may be right. Not for the same reason... but because the more that middle america sees the 'elite' dumping on Sarah... the more they like her. Strange. We used to value intelligence.. but folksiness.. not truthiness.... is supreme.”

Freesia2 replied on Nov 20, 2009 at 15:21:24

“She is a PUMA of sorts. She was there for the original meetings, I recall reading, with the identified PUMAs like Harriet Christian set, etc. She also is connected with the NO Quarter blog (enter at your own risk.) And she's long tried to promote Palin. There was an article during David Letterman brawl where she pegged Palin as the "new face of feminism". (You just smiled didn't you? :-) )”

Last year, someone asked him why he didn't eat more mince pie.... and he told us that he hated it! All these years, we just assumed.. and no one ever asked him!! So, now he is content with apple and pumpkin.. and my chickens have to hope for stale rolls!!”

But this year my changes are pumpkin cheesecake ( purchased) and a new stuffing recipe. Adding sausage this year.. in a separate casserole. Still preparing the old stand by in the bird..”

“Do you think turkey would brine well in cider?”

oldngrumpy replied on Nov 18, 2009 at 15:58:37

“The salt is the main item in the chemical brining process. It actually draws moisture from the meat first and then the process reverses and the meat absorbs liquid. Providing a desired flavor of liquid is as simple as diluting cider, juices, or liquid smoke in the brine.

I use liquid smoke and soy sauce when I brine wild game before making jerky. Some whiter meats lend themselves well to fruit juices and cider. I have also used a buttermilk (diluted) salt brine for beef or deer steaks and roasts that I wanted to tenderize. The enzymes in buttermilk break down the protein strings that make meat tough.

The brine should never be saved or reused, as it will contain a lot of proteins.”

“My mom just moved in with my family, and we were discussing the menu last night. The additions:

Fiddlehead Ferns ( she has some frozen from this past spring).
Not sure if we are just steaming, or making some sort of cream/white/cheese sauce.

Anyone out there have any suggestions?
Otherwise, brined bird.. roasted covered ( to steam) then high temp to brown. Really easy
Stuffing ( Bells)with wild rice.. onions and celery, and one pan with sausage this year.
Lots of mashed potatoes.. nothing fancy, or the kids( and hubby) will revolt.
I love trying new gravy recipes..... so if there are any suggestions I would love them!”

newtom replied on Nov 18, 2009 at 11:33:03

“Fiddleheads, in my opinion, are best prepared rather simply. I sautee them with butter and just one crushed garlic clove and some salt and pepper. They're rather delicate. I would definitely not sauce them with anything as heavy as a cream or cheese sauce.”

cybermome1207 replied on Nov 17, 2009 at 08:57:51

“I cook an organic bird and it tends to be lean. So I have to add extra liquid for gravy.

In the roasting pan, I put carrots, celery, onions and make a bed that the turkey can roast on.
After turkey is done, I strain the above and use what juices and drippings I have from the roasting pan in a small pot, Its hard to give quantities of liquid, but I usually add at least of cup of organic chicken stock along with flavorings like wine and maybe a little mustard. To thicken add about a table spoon of roux.”

Will pick some kale and carrots out of the garden, and will make some 'beef stoup' as my family calls it.... ( combo of soup and stew).. If I really get ambitious, I will make some rolls from scratch. Quick...

The Lessons of Maine

Commented Nov 05, 2009 at 07:23:01 in Politics

“I'm right there with you. But we must fight fear... Yes there is hate out there too... but I really believe that most people who voted to end gay marriage in maine are afraid... and there are folks out there who put all kinds of things in their heads to be afraid of. Education will work with some of these people, others are a lost cause. But let's keep going.. one person at a time.”

“You are correct, I don't know the district. I have a friend that is from the area, and says it is an interesting place politically. I do have empathy with true tea partiers, because they seem to be more concerned with govt run amok... regardless of party. But my heartburn is about the more public face of this movement, makes me question their intentions.... not the real members of a conservative movement. Also, the ones that show up in black face and carry guns.... these don't have the same gravitas as others.

Speaking as a Ross Perot girl.... I understand what is going on. But the corporate motivation in stirring up the masses... and the prominent repubs falling all overthemselves to 're-invent' their positions also give me pause.”

Tomorrow We Can Make History

Commented Nov 02, 2009 at 21:12:12 in Politics

“I thought the ads against question 1 were very well done. Stressing love, hope, and fairness. The yes on 1 ads are all about fear and lies. The Maine Atty General commissioned an opinion from the state education sec about marriage curriculum and how the marriage law would affect it. The opinion was no, there is nothing in the state curriculum mandates that speaks about ANY marriage. But.. to the proponents of the measure.. that was not good enough. Of course any specific decision is local... as Maine is very much a locally controlled state where education is concerned.

While phonebanking, I learned that many mainers are not comfortable with the M word.. when discussing gay marriage. Seems that their thoughts go to what happens between the sheets.. not about partnership, fairness, law.

But I have had the pleasure of hosting two organizers from DC.. and they are two of the most hardworking and dedicated young people I have ever met. Regardless of the outcome, their hard work has made a difference in how our state thinks about gay marriage. I hope and pray that we do the right thing.

It's late for much else.. but positive thoughts and prayer. We need all the positive energy we can get!”

“What is wrong with the folks that live in the district.. actually electing someone from their district.. that has roots there, and can represent the people in a responsible way? How can anyone who lives there like the fact that teabaggers have taken over... and everyone that is bleating about their 'preference' could give two hoots about the people that live there.

Dede lives there. Hoffmann wants to pull a lever and control the sun. Morning in America. Really original.”

Solid Citizen replied on Nov 03, 2009 at 04:50:20

“Hoffman has extensive ties to NY-23. He grew up in the district. He has business interests in the district. He has been denied residency in the idstrict due to a legislative obscenity called gerrymandering

You obviously are oblivious to the mess that redistricting made of NY-23. 700,000 citizens in a region north of Syracuse- Albany that includes the entire Adirondack Park should be one congressional district. The Democrat led NY Assembly and Senate will really muck things up regarding congressional representation after the 2010 census

There are some uninformed folks who confuse teabaggers with Tea Partiers. Tea Partiers advocate limited government and the restoration of curtailed liberties.
Teabaggers tend to be more prevalent in San Francisco (doing what ever teabaggers do)”

“Using your arguement, the reality is that the insurance companies determine whether I have a burger, filet, or nothing at all. All depending if I have had acne, am over or underweight, or some other silly reason. I am hungry, and need to eat to survive. In our world of insurance companies controlling what care you get, they have the final say of what, or if, you eat.

We should not have to deal with these leeches, whose sole existince is to make profit by feeding folks wood chips drenched in ketchup. ( Remember Ronny Raygun said that ketchup is a vegetable?”

PlaceboStudman replied on Oct 24, 2009 at 12:04:46

“Using my argument, if everyone had free insurance AND the annual salary of a Bill Gates or a Steve Jobs, that in itself would do nothing to prevent people from dying from kidney and liver failure due to 30 years of a heart medication. Having Bill Gates Salary would not do anything to prevent a cancer patient in the hospital from dying from a staph infection because the chemo/radiation obliterated their immune system. Having Bill Gates salary would not prevent antidepressants from being produced that actually CAUSE suicide.

ONLY a reform of BigPharma and a dramatic infusion of money to the NIH would do those things”

“I would love to, once we have no more insurance related issues to cloud the issue. People don;t like to talk about what they can't afford. We are a very materialistic and proud country.. so if someone can't get their blood pressure meds.. ( like me) because ( combined ) they are 150.00 a month.... they don't go around trumpting that to their friends and neighbors.

My issues are very mild compared to the folks that can't get insurance. I at least have some coverage. But when those impedements are history... then we can talk about all the other ways folks get sick and die.”

PlaceboStudman replied on Oct 24, 2009 at 10:58:09

“How does insurance related issues cloud the issue, is what I have to ask? What does the payment method and price have to do with the quality of the medicine itself?

If you go to a restaurant, whether you pay $5 cash for a burger (sprained ankle) or $15 credit for a filet mignon (chemo and radiation) what does it matter, when both the steak and burger come from a kitchen that is riddled with salmonella and E-coli? Both cases are going to make you equally sicker in the long run, and you can't blame your VISA card for that (insurance)”
