The bottom line is this: Washington, D.C. is a great food city and we are proud to be a part of it. Despite dire warning, there is no threat from advances in modern cuisine.
Molecular gastronomy isn't going to kill fine dining in D.C. any more than couture is going to kill fashion. Any field of artistic endeavor needs adventurers.
Not everything about molecular gastronomy is bad. But, as a trend, molecular gastronomy threatens to detach "fine dining" from popular food culture. And that's not good for D.C.
